Grilled Brie Tomato Sandwiches
This is a wonderful sandwich to make in the summer with fresh tomatoes straight from your garden.
INGREDIENTS | SERVES 6
1 loaf ciabatta bread
2 tablespoons olive oil
3 cloves garlic, minced
1 (8-ounce) wedge Brie cheese, sliced
3 ripe red tomatoes, sliced
½ cup chopped fresh basil
1. Cut the ciabatta bread in half lengthwise, making 2 equal halves and exposing the center.
2. In small pan, heat olive oil; add garlic. Cook and stir over medium heat until fragrant. Drizzle the oil over the cut sides of the bread.
3. Layer cheese, tomatoes, and basil down the length of the bottom half of the bread. Top with second half and press down.
4. Serve immediately, or grill the bread on a charcoal grill or in a panini press until the cheese is melted and bread is toasted.
