Peanut Butter Chocolate Coffee Cake

This cake is fabulous served warm from the oven with a cup of coffee. It can be part of a brunch, or served as dessert after a meal of meatloaf and roasted potatoes.

INGREDIENTS | SERVES 16

¼ cup butter, softened

¾ cup brown sugar

¼ cup flour

1½ cups semisweet chocolate chips

1 cup chopped walnuts

1 (18.25-ounce) package yellow cake mix

2 eggs

1 cup peanut butter

¼ cup oil

1. In medium bowl, combine butter, brown sugar, and flour; mix until crumbly. Stir in chocolate chips and walnuts and set aside.

2. Preheat oven to 350°F. Spray a 9" × 13" pan with nonstick baking spray containing flour and set aside.

3. In large bowl, combine remaining ingredients and stir until blended. Beat on high speed for 2 minutes. Pour into prepared pan. Sprinkle with chocolate chip mixture.

4. Bake for 35 to 45 minutes or until cake begins to pull away from sides of pan and top springs back when lightly touched. Cool at least 1 hour, then cut into squares to serve.
