Peanut Butter Tea Cakes

Like a Russian Tea Cake, but flavored with peanut butter and made easy with a cake mix, these cookies are so good!

INGREDIENTS | YIELDS 48 COOKIES

½ cup butter, softened

¾ cup peanut butter

1 (18.25-ounce) package yellow cake mix

4 dozen chocolate kisses, unwrapped

Powdered sugar

1. In large bowl, combine butter and peanut butter and mix well. Add yellow cake mix; mix until a dough forms. Cover and chill for 4 to 6 hours.

2. When ready to bake, preheat oven to 400°F. Roll dough by tablespoons around a chocolate kiss; form into a ball and place on parchment paper-lined cookie sheet.

3. Bake cookies for 8 to 12 minutes or until just set. Let cool on sheet for 3 minutes, then drop into powdered sugar and roll to coat. Let cool completely on wire racks, then coat in powdered sugar again when cool.

Chilling Dough

Chilling dough makes a more tender cookie. The gluten in the flour has a chance to relax a bit, which makes the dough easier to handle. Chilling also makes soft doughs a bit harder, so the insides stay soft and tender while the outside becomes crisp.
