Pecan Pie Waffles

Pecans sautéed in butter, along with ground oatmeal and brown sugar, add wonderful flavor to these special waffles. Serve with warmed maple syrup and a sprinkle of powdered sugar.

INGREDIENTS | YIELDS 8 WAFFLES

¼ cup butter

1 cup chopped pecans

3 cups pancake mix

1p cup oatmeal, ground

¼ cup brown sugar

3 eggs

2 teaspoons vanilla

½ cup milk

½ cup water

1 tablespoon canola oil

1. In small saucepan, melt butter over medium heat. Add pecans; cook and stir until nuts are fragrant. Remove from heat; cool for 15 minutes.

2. In large bowl, combine remaining ingredients except oil; mix just until dry ingredients are moistened. Stir in pecans and butter.

3. Heat waffle iron as directed. Brush lightly with oil, add batter, close iron, and bake until steaming stops. Remove waffle and serve. Repeat with remaining batter.

Best Waffles

Waffles are easy to make as long as you follow a few rules. Make sure the waffle iron is hot before you add the batter, and don’t open it until the waffle stops steaming. The first waffle is almost always a test waffle; that is, it will stick and not be perfect. Just eat it and continue!
