Salmon Pine Nut Pizza
This delicious pizza rivals any you’ll find at a gourmet restaurant, and it’s much less expensive.
INGREDIENTS | SERVES 6
1 prepared focaccia bread
2 tablespoons butter
1 onion, chopped
3 cloves garlic, minced
1 (8-ounce) package cream cheese, softened
cup crème fraîche
1 teaspoon dried dill weed
½ teaspoon dried thyme leaves
1 (15-ounce) can red salmon, drained
1 cup shredded Swiss cheese
1 cup shredded Cheddar cheese
½ cup pine nuts
1. Preheat oven to 400°F. Place the focaccia bread on a cookie sheet. Melt butter in large saucepan; add onion and garlic and cook until onions begin to brown, about 10 to 12 minutes.
2. Add cream cheese to onion mixture; cook and stir until smooth. Remove from heat and add crème fraîche, dill, and thyme.
3. Spread cream cheese mixture on the focaccia. Remove skin and bones from salmon and flake; sprinkle on cream cheese mixture. Top with cheeses and pine nuts.
4. Bake pizza for 14 to 19 minutes until the cheeses are melted and starting to brown. Cut into wedges and serve.
