How to Freeze Almost Any Baked Good
Most baked goods freeze beautifully; it’s just a matter of how you do it. Some things must be baked first, while others can be frozen raw and baked whenever you please. Take care to wrap everything tightly, squeezing out as much air as possible. For individually shaped raw doughs (like cream puffs or portioned-out cookie dough), freeze them on a baking sheet until they’ve firmed up before transferring to a zipper bag, so that they don’t stick together.
Any baked quick bread or muffin
Cooked pancakes, waffles, or French toast
Cookie dough, shaped and portioned or in a log
Baked cookies
Baked brownies or blondies, uncut in one big block or cut and individually wrapped
Baked cakes
Piecrust or tart dough, either in a disk or fitted into the pan
Pizza dough, unrisen
Cream puff pastry dough, piped into shapes, raw or baked
Puff pastry dough, unrolled or cut into shapes, raw or baked
Biscuits or scones, shaped, raw or baked
Baked bread, buns, and rolls
