Leftover Turkey Shepherd’s Pies

Think of this as more of a guide than a recipe. Anything you have left over from the holiday meal is perfect for this dish. In addition to leftover turkey, you can use leftover holiday peas, carrots, and mashed potatoes.

INGREDIENTS

1½ cups chopped cooked turkey

1 cup gravy

½ cup cooked peas

½ cup chopped cooked carrots

2 cups mashed potatoes

DIRECTIONS

1. Preheat the oven to 350°F. Lightly coat 4 (8-ounce) ramekins with cooking spray.

2. In a large bowl, combine the turkey, gravy, peas, and carrots. Divide the mixture between the ramekins. Top each with ½ cup mashed potatoes. Do not over-smooth the tops; the peaks will brown for a pretty finish. Bake for 20 to 30 minutes, until bubbling and the tops are golden.

3. Let cool for 10 minutes, then serve.
