These potatoes are like that staple piece of your wardrobe that you can dress up to wear to an art gallery opening or dress down for a chill night with friends. They pair well with everything from The Best Roast Turkey on Thanksgiving to Company-Ready Brisket for Hanukkah or Christmas.
INGREDIENTS
3½ to 4 pounds Yukon Gold potatoes, unpeeled, scrubbed
¼ cup olive oil
1 teaspoon kosher salt
1 teaspoon herbes de Provence
DIRECTIONS
1. Preheat the oven to 425°F. Generously coat a baking sheet with cooking spray.
2. Cut the potatoes evenly into 1- to 2-inch pieces. Place them on the prepared baking sheet, drizzle with the oil, and sprinkle with the salt and herbes de Provence. Toss gently to evenly distribute the ingredients and then arrange the pieces skin-side down.
3. Place the baking sheet in the middle of the oven and bake for 30 minutes, or until brown and slightly puffed. Transfer to a platter and serve.
