Even Goldilocks would agree that this cauliflower porridge is “just right.” It’s got the same starchy, comfort-food texture as regular oats, but with a lot fewer carbs.
Place the cauliflower and almond milk in a small pot. Bring to a boil over medium-high heat. Reduce the heat to medium-low, cover, and cook for 7 to 10 minutes until the cauliflower is fork-tender.
Remove from the heat. Let cool briefly and puree in a blender with the cinnamon and sweetener. Serve warm with berries on top, if desired.
Notes
Add a dash of vanilla for extra flavor.
Great served with a Keto Coffee for added fat.
