The biggest key to keto success is filling up with high-fat meals. When you start the day with an omelet loaded with healthy fat, you won’t need a morning snack and may not even be hungry at lunchtime.

Heat the olive oil in an 8-inch omelet pan over medium-high heat. Add the onion and cook, stirring, until translucent, about 5 minutes. Add the spinach and tomato and season to taste with the salt and black pepper. Cook, stirring, to wilt the spinach, 2 to 3 minutes, then remove from the pan to a plate.

In the same pan over low heat, add the beaten eggs, cover, and cook for 30 seconds. Add the sautéed spinach and tomato on one side of the omelet. Fold the omelet in half over itself, resembling a half-moon. Cook until the egg is set, 1 to 2 minutes more.

Serve immediately with the avocado slices on top.

Note

Add chopped bacon for extra flavor and fat.
