Cabbage is a superfood that’s high in immune-boosting vitamin C. Making a coleslaw without carrots makes it more keto-friendly. Serve it as a side with burgers or use it to top barbecued shredded pork or chicken.
Place the cabbage in a large bowl.
In a separate bowl, mix the vinegar, mayonnaise, celery seed, stevia, and salt and black pepper to taste. Pour over the cabbage and toss to coat.
Chill for at least 2 hours before serving.
Notes
A couple tablespoons of chopped onion can be added.
