Cucumber slices topped with a mix of cream cheese and olives make for healthy finger food. Hosting a get-together at your house? Whip up this appetizer in no time.
Use a melon baller or huller to remove the seeds from the center of the cucumber slices to make a small bowl-shaped cavity in each. Set aside.
In a medium bowl, blend together the cream cheese, black olives, pimento-stuffed olives, and onion powder in a medium bowl. Spoon the cream cheese mixture into the cavity in the center of the cucumber slices.
Notes
Just pimento-stuffed olives can be used if you don't like black olives.
