They say the devil is in the details. So, does that mean the devil in deviled eggs is mayo? Well, if you can’t stomach mayo, you’ll be glad to know you can used mashed avocado as a velvety-smooth alternative.
Halve the eggs lengthwise. Remove the yolks from the whites and place in a mixing bowl.
Add the avocado, lemon juice, garlic powder, and salt to the egg yolks. Mash until the mixture is well combined. Pipe or spoon the mixture into the egg whites. Sprinkle paprika on top for garnish.
Notes
Sliced jalapeños or olives can also be used to garnish the tops.
Chopped cooked pieces of bacon can be added to the avocado mixture for added flavor.
