A colorful side dish with zucchini, yellow squash, and red pepper, it’s a great combination of summer vegetables!
Cut the zucchini, squash, and bell pepper into thin strips of similar size.
Heat the oil in a large skillet over medium heat and add the sliced zucchini and yellow squash. Cook, stirring often, until the vegetables are tender, 3 to 4 minutes. Add the red pepper slices and cook, stirring, until all the vegetables are tender, about 3 minutes longer.
Add salt and black pepper to taste. Garnish with the parsley, if desired.
Notes
Green peppers have fewer carbs than red and can be used instead, but the dish won’t be as colorful.
