Want to know the secret for never missing mashed potatoes again? Perfect the art of making cauliflower mash. All it takes is a few steps, and adding cheese to the mashed cooked vegetable gives it a thicker texture like that of mashed potatoes.
Steam the cauliflower until it’s very soft, about 10 minutes.
Add the cooked cauliflower with the cream cheese, Parmesan cheese, butter, salt, and black pepper to a blender or food processor (or combine them in a large bowl and use an electric mixer). Blend until smooth and the cauliflower is well mashed. Garnish with chives, if desired.
Notes
Add 1 clove roasted garlic for added flavor.
Use almond milk cream cheese spread, butter-flavored coconut oil, and nutritional yeast in place of the cheeses and butter for a dairy-free version.
