Baking broccoli on a sheet pan releases some of the natural vegetable sugar to give it a slightly sweeter taste than when you steam it. Many prefer the taste over steaming or stir-frying.
Preheat the oven to 425°F.
Combine the broccoli, olive oil, garlic, and salt together and then spread over a rimmed baking sheet. Bake for 10 to 15 minutes, until the broccoli is tender and starting to brown. Toss the broccoli at least once during the middle of the baking time for even cooking.
Notes
Be sure not to overlap the broccoli florets. They should be roasted in a single layer.
It’s best to cut the florets in even pieces so the smaller pieces don’t burn before the larger ones are done roasting.
