Have egg rolls but hold the rolls! The egg roll filling is the best part anyway, so why bother with the carb-y wrapper? If you need a blanket for the filling, wrap it in lettuce.
In a large skillet over medium heat, cook the ground pork, stirring and breaking it up with a wooden spoon, until no longer pink, 7 to 10 minutes. Add the coleslaw mix, coconut aminos, garlic, and ginger and cook, stirring, until the cabbage is wilted, 3 to 5 minutes.
Notes
A sprinkling of Chinese five-spice powder can be added for more zing, and green onions can be added for garnish.
