Although lamb chops are tasty plain, a simple marinade makes them more tender and flavorful.

Combine the onion, vinegar, olive oil, garlic, and salt in a large zip-top plastic bag. Add the lamb chops and marinate in the refrigerator for an hour.

Preheat the oven to 425°F.

In an oven-safe skillet over medium-high heat, sear lamb chops for about 3 minutes per side. Transfer the skillet to the oven and bake for 6 to 8 minutes, until done (the lamb should register 140°F on a meat thermometer at its thickest point).
