Stir-Fried Scallops

A simple starch-free scallop stir-fry with bacon and broccoli. It’s a dish that’s sure to be a winner at get-togethers with friends or a quick family dinner at home.

If using large sea scallops, cut them into smaller halves. Place the scallops in a bowl. Stir in the coconut aminos to coat and let sit in the refrigerator until needed.

In a large skillet over medium heat, cook the bacon, stirring, until crisp, 6 to 8 minutes. Remove the bacon from the grease and set aside.

Add the scallops, green onions, and broccoli to the hot bacon grease. Cook over medium heat, stirring, until the scallops are fully cooked and the broccoli is tender, 3 to 5 minutes.

Stir in the bacon just before serving.
