Mussels are an inexpensive seafood that taste gourmet when steamed in a garlic broth. Serve them as an appetizer or to top spiralized vegetables.
Wash the mussels and clean by removing any barnacles and beards.
Heat the oil in a large skillet over medium-high heat. Add the parsley and garlic and cook, stirring, for 30 seconds to a minute. Add the mussels, broth, salt, and black pepper. Reduce the heat to medium, cover, and cook for about 10 minutes. Throw out any mussels with unopened shells.
