Balsamic isn’t just for drizzling on salads and strawberries. If you’ve never had it drizzled on fish, you’re in for a tasty surprise! Olive oil adds some fat and sage provides a bolder taste.
Preheat the oven to 400°F. Coat the bottom of a sheet pan with the olive oil. Add the balsamic vinegar, sage, salt, and black pepper and blend well. Coat the fish fillets on all sides with the oil and vinegar mixture.
Cover the pan with foil. Bake until the fish is almost done, about 15 minutes. Remove the foil and bake until the fish flakes easily, about 5 minutes more.
Notes
Flounder, cod, or wild striped bass fillets are great substitutes for the halibut.
You can also marinate the fish in the seasoned vinegar and oil mixture for 2 to 4 hours in the fridge before baking.
