Have linguine with clam sauce, but hold the pasta! When you replace high-carb linguine with spiralized zucchini, you can enjoy the classic dish without guilt or bloat.
Spiralize the zucchini. Set aside.
Melt the butter in a saucepan over medium-high heat. Add the garlic and cook, stirring, until tender, 2 to 3 minutes. Add the clam meat and cook, stirring, for another 2 to 3 minutes.
Add ½ cup water and bring to a boil. Reduce the heat and simmer until the liquid is reduced by about a quarter, 7 to 10 minutes. Stir in the heavy cream and simmer until the desired thickness is reached, about 5 minutes.
Season with the salt and black pepper to taste. Stir in the zucchini noodles and cook until the zoodles are softened, about 2 minutes.
Garnish with parsley, if desired.
Notes
For a dairy-free version, use olive oil in place of the butter and 1 cup nondairy milk in place of the heavy cream and water.
