A light and airy dessert bursting with fresh strawberry flavor. Not only is it low in carbs, it contains gelatin, which may help control blood sugar. It’s sure to become a favorite keto dessert!
Add the strawberries, sweetener, and ½ cup water to a medium saucepan over medium-low heat. Cook, stirring frequently, until the sweetener is dissolved. Transfer to a blender and puree. Set aside.
In a small cup or bowl, sprinkle the gelatin over 3 tablespoons cold water and let stand for a couple minutes to soften. Then add the boiling water and stir to dissolve the gelatin.
Add the cream to the bowl of a stand mixer fitted with the whisk attachment and whip while streaming in the dissolved gelatin and then the vanilla. Whip until it forms soft peaks. Gently fold in the strawberry puree. Beat for another 30 to 60 seconds. Chill for at least an hour before serving.
Notes
For best results, use a chilled bowl to whip the cream.
Coconut cream can be used to make this dairy-free.
