1 medium butternut squash (about 3 pounds)
1 tablespoon olive oil
1 1/2 teaspoons dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
Peel and cut squash crosswise into 1/2-in.-thick slices; remove and discard seeds. In a large bowl, toss the squash with remaining ingredients. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until tender.
