SLOW-COOKED BARBECUED PORK SANDWICHES

These saucy sandwiches are great for hungry crowds and easy to prepare. Just keep the meat warm in the slow cooker until it’s time to serve.

1 medium onion, chopped

1 tablespoon butter

1 can (15 ounces) tomato puree

1/2 cup packed brown sugar

1/4 cup steak sauce

2 tablespoons lemon juice

1/2 teaspoon salt

1 boneless pork shoulder butt roast (3 pounds)

10 hard rolls, split

Coleslaw, optional

1. In a large skillet, saute the onion in butter until it is tender. Stir in the tomato puree, brown sugar, steak sauce, lemon juice and salt. Cook over medium heat until sugar is dissolved and heated through.

2. Place roast in a 5-qt. slow cooker; pour sauce over the top. Cover and cook on low for 7-9 hours or until meat is tender. Remove roast; cool slightly. Skim fat from cooking juices. Shred the meat with two forks and return it to the slow cooker; heat it through. Serve on rolls. Top it with coleslaw if desired.
