CHOCOLATE CHIP PANCAKES WITH CINNAMON HONEY SYRUP

Give ordinary pancakes kid-friendly appeal with chocolate chips and cinnamon honey syrup. This is one of those special Saturday morning favorites they’re sure to remember.

2 cups all-purpose flour

1/4 cup sugar

2 tablespoons baking powder

1 teaspoon salt

2 large eggs

1/2 cups whole milk

1/4 cup canola oil

1/2 cup miniature chocolate chips

CINNAMON HONEY SYRUP

1 cup honey

1/2 cup butter, cubed

1 to 2 teaspoons ground cinnamon

1. In a large bowl, combine the flour, sugar, baking powder and salt. Mix the eggs, milk and oil; add to the dry ingredients just until moistened. Fold in chocolate chips.

2. Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Keep pancakes warm.

3. Combine the syrup ingredients and microwave, uncovered, on high until the butter is melted and syrup is hot, stirring the mix occasionally. Serve with pancakes.
