GRAMMY’S CHEESE GRITS

What an amazing Grammy CATHY SANTALUCIA CLARK (Greenville, South Carolina) is! Her five grandchildren share that she loves the ocean and helps them jump the waves and find jewels, sand dollars, shells, and crabs in the sand. Each year the grandparents and their two children and spouses, who are parents to these five little ones, take a group vacation. And Grammy buys the little ones matching outfits for their annual outing to Hilton Head, South Carolina. All five of her grandchildren were born in the South—siblings MAURA and KADEN KAHUDA (Chatham, Virginia) and siblings KYLEE, JACK, and CAMERON CLARK (Ashburn, Virginia). Together, Grammy and the little ones also enjoy strawberry and blueberry picking, painting pictures, and doing crafts. And Grammy has sewn dresses and tooth pillows for these lucky grandchildren.

6 cups chicken broth

2 cups whole milk

1 teaspoon salt

½ teaspoon ground white pepper

2 cups quick-cooking grits, uncooked

1 ⅔ cup (approximately 7 ounces) shredded smoked Gouda

3 tablespoons butter

1 Bring the chicken broth, milk, salt, and pepper to a boil in a medium pan over high heat. Gradually whisk in the grits.

2 Cover, reduce the heat to medium, and simmer 5 minutes until thickened. Add the cheese and butter and stir until melted. Serve warm.

MAKES 8 TO 10 SERVINGS.
