ANDREW HELTSLEY (Nashville, Tennessee) lived about three hours from his grandmother, HELEN SPARKS NICHOLS (Greenville, Kentucky), when he was growing up. Helen was known to her grandchildren as MaMaw. Andrew remembers MaMaw hosting large family dinners around her table, and this pound cake was a staple at almost every such event. While this cake was a family favorite, Andrew was especially known for wanting it all to himself. It’s super moist and delicious!
CAKE:
Cooking spray and flour to prepare pan
1 (18.25 ounce) box lemon supreme cake mix
1 (3 ounce) box lemon instant pudding mix
½ cup vegetable oil
1 cup water
4 large eggs
GLAZE:
1 cup powdered sugar
1 tablespoon plus
1 teaspoon milk or lemon juice
1 teaspoon vegetable oil
1 Preheat the oven to 350 degrees. Spray and flour a 10-inch tube or Bundt pan.
2 TO MAKE THE CAKE, in a large bowl use a hand mixer to beat the cake and pudding mix with the oil, water, and eggs for 2 minutes at medium speed. Pour the batter in the pan and bake for 45 to 50 minutes, until the center springs back when touched lightly. Cool 25 minutes in the pan; then invert onto a serving plate.
3 TO MAKE THE GLAZE, in a small bowl blend together the powdered sugar, milk, and oil. Spoon over the cake. Slice and serve.
