MYRTLE TRULL was affectionately known as Mamaw to her grandchildren. Mamaw was born and raised in Humboldt, Tennessee, and later lived in Jackson, Tennessee. Granddaughter MELODY BARLOW (Murfreesboro, Tennessee) recalls that Sunday dinner was always fried chicken and roast beef with potatoes and carrots, other fresh vegetables, and cantaloupe, when it was in season. “I loved her egg custard pie and tea cakes that were thick, soft sugar cookies,” Melody adds.
Cooking spray
½ cup lime juice or juice from 3 Key limes
1 large egg
½ cup vegetable oil
1 (18.25 ounce) box lemon cake mix
1 Preheat the oven to 350 degrees. Lightly spray a cookie sheet.
2 In a large bowl add the lime juice and egg and beat with a fork. Add the oil and cake mix and cream together with an electric mixer.
3 Scoop out by teaspoonfuls onto a cookie sheet, and place 2 inches apart. Bake for 10 to 12 minutes. Watch carefully, as these will burn easily. Cool on a wire rack before serving.
MAKES APPROXIMATELY 1 ½ DOZEN COOKIES.
