GRANNY’S CHESS SQUARES

How many people can say that their Granny has their back? JESSICA DILLARD (Lewisburg, Tennessee) says hers does! LINDA ORR (Kingston Springs, Tennessee) has always told Jessica that she supports her in whatever she does and has taught her to be a strong, independent woman who can do whatever she sets her mind to. Jessica’s favorite day of the year is December 25 because her family goes to Granny’s for Christmas breakfast. Well, it’s actually more like a Christmas feast! Granny works so hard to make sure everything is perfect, and the spread is on the table waiting as soon as the family walks in. And, Jessica shares, “Of course, it is always perfect. Then we spend the rest of the day opening presents and watching and quoting from A Christmas Story while trying to contain our laughter. It’s always so much fun, and it warms my heart to get to spend all day with Granny, the most caring and tenderhearted woman I know.”

Cooking spray

1 (18.25 ounce) box yellow cake mix with pudding

4 large eggs, divided

½ cup (1 stick) margarine, melted

1 (8 ounce) package cream cheese, softened

1 (16 ounce) box powdered sugar

1 Preheat the oven to 350 degrees. Spray a 9 × 13-inch glass pan.

2 In a medium bowl mix the cake mix, 1 egg, and margarine together and press into the pan.

3 In a medium bowl use a hand mixer to combine the cream cheese, powdered sugar, and remaining 3 eggs and mix well. Pour on top of the first layer.

4 Bake for 45 minutes or until golden brown on top.
