SANDRA MEADOWS (Nashville, Tennessee) was born in Murfreesboro, Tennessee. She is known as Nini to her four grandchildren—two boys and two girls—all of whom live in Tennessee. According to granddaughter AVA MEADOWS (Brentwood, Tennessee), “Nini decorates her house for every holiday, and she always lets me and my cousins help. She is a wonderful grandmother, and we all adore her.” Nini shares that she loves this recipe because it’s quick and easy and always a hit with the grandchildren. It’s great to eat for breakfast or any other time of the day.
Cooking spray
2 ⅔ cups baking mix
¾ cup whole milk
2 large eggs, lightly beaten
2 teaspoons dry mustard
1 ½ cups shredded sharp Cheddar cheese, divided
2 tablespoons butter
1 Preheat the oven to 350 degrees. Lightly spray a large loaf pan.
2 In a large bowl stir the baking mix and milk with a spoon. Add the eggs, mustard, and 1 cup of the cheese. Pour into the loaf pan. Sprinkle the remaining cheese on top and dot with butter.
3 Bake 45 to 50 minutes. Cool in the pan for 10 minutes, and then remove and cool on a wire rack before slicing.
