ALYSSA CUNNINGHAM (Old Hickory, Tennessee) was born in Hermitage, Tennessee, and shares that her Memaw, SHERRIE CUNNINGHAM (also of Old Hickory), has been there for her all her life. “If you don’t believe in angels, then you haven’t met my Memaw. She has been my guide through life. Everything she cooks is with love, and I especially like her special holiday dishes,” Alyssa shares. Memaw has shared much with Alyssa about their family history and recipes and taught her that your best friends are your family. Memaw’s strawberry salad is Alyssa’s favorite dish.
1 ¼ cups water
2 (3 ounce) boxes strawberry banana gelatin
2 (10 ounce) boxes frozen strawberries, in juice
1 (16 ounce) can crushed pineapple, drained
4 medium bananas
1 (16 ounce) container sour cream
1 cup chopped pecans (optional)
1 In a saucepan boil the water. In a large bowl add the gelatin. Pour water over the gelatin and mix well. Add the strawberries, pineapple, and bananas and mix well.
2 Pour half of the mixture into an 8 × 11-inch dish, and freeze for 35 to 40 minutes or until firm.
3 Remove from the freezer and cover with sour cream. Pour the remaining mixture over the sour cream and refrigerate overnight. Top with pecans before serving.
MAKES 10 TO 12 SERVINGS.
