MOM MOM’S BROWN RICE CASSEROLE
JARED HENDERSON (Franklin, Tennessee) shares that his very favorite thing to eat when he was growing up was his Mom Mom’s Brown Rice Casserole. Prior to each birthday she’d call to confirm what he wanted her to make for his birthday dinner, and she would say, “I know you want the brown rice casserole.” The whole family gets together once a month, and every time, without fail, the casserole is there. On arrival, Jared can count on a hug from Mom Mom as she whispers, “Your casserole is right over there.” Mom Mom is CAROLYN BOOTH (Nashville, Tennessee). Carolyn has eight grandchildren and makes each one of them feel special by cooking their favorite foods.
Cooking spray
1 cup rice, uncooked
2 (10.5 ounce) cans beef consommé
1 small (4.5 ounce) jar chopped mushrooms, drained (optional)
½ cup (1 stick) butter
1 small onion, chopped
1 Preheat the oven to 350 degrees.
2 Lightly grease a 2-quart casserole dish with cooking spray and add the rice, consommé, and mushrooms.
3 Melt the butter in a medium skillet over medium-high heat, and sauté the onions until translucent in color. Pour the melted butter and sautéed onions over the rice mixture. Stir until well blended.
4 Cover and bake approximately 45 minutes or until the rice is fully cooked and tender.
MAKES 6 TO 8 SERVINGS.
