MAKES 1 (9 × 13-INCH) CAKE
We laugh that we can be the best of friends and still enjoy different foods. Raisins are a favorite of Kathy’s, but not so much for Roxanne. Guess who serves this dessert often?
Preheat the oven to 350°F. Spray a 9 × 13-inch pan with nonstick cooking spray.
Drizzle 2 tablespoons of the butter into the prepared pan and tilt the pan to coat the bottom evenly. Sprinkle the raisins evenly in the pan. Sprinkle the brown sugar evenly over the raisins. Spoon the applesauce evenly over the raisins. Sprinkle the cake mix evenly over the applesauce. Drizzle the rum evenly over the cake mix. Sprinkle the pecans evenly over all. Drizzle the remaining 6 tablespoons melted butter over the top.
Bake for 40 to 45 minutes or until the cake is set and golden brown.
tip: Substitute unsweetened apple juice for the rum in this recipe if you prefer.
