The creamy zucchini soup is one delicious way to complete your Bosnian menu; here is a recipe that you can try out to have a delicious meal.
Ingredients (6 servings)
1 zucchini, peeled and diced
1 onion, chopped
2 carrots, sliced
1 garlic clove, chopped
3 large potatoes, peeled and diced
2 tablespoons of olive oil
1 tablespoon of apple cider vinegar
1 teaspoon of paprika
1 teaspoon of crushed red peppers
2 tablespoons of sour cream
5 cups of vegetable broth
Salt and black pepper to taste
1 cup of bacon, cooked and crumbled
Preparation
Sauté the red peppers with olive oil and paprika in a large pot for 30 seconds. Stir the carrots, garlic and onions in, then sauté for 5 minutes. Add the diced potatoes and vinegar and sauté for another 5 minutes. Stir the zucchini and broth in and boil. Reduce the heat and cook for 20 minutes, then add the sour cream. Mix well. Blend this soup using an immersion blender. Serve warm with a small dollop of sour cream and bacon bits on top.
