Beef Soup with Semolina Dumplings

If you haven’t tried this famous beef soup with semolina dumplings before, here’s a simple and easy to cook recipe that you can recreate at home in no time with minimum effort.
Ingredients (4 servings)
Beef Stock
2 beef shanks and bone marrow
3 carrots, chopped
1 onion, roasted and chopped
1 cup of cauliflower florets
1 celery stalk
2 parsley roots
8 black peppercorns
Salt to taste
Vegeta, or a similar spice mix to taste
2 tablespoons of vegetable oil
3 quarts of water
Semolina Dumplings
1 egg
2 tablespoons of all-purpose flour
¼ teaspoon of baking powder
½ cup of wheat cream
1 tablespoon of butter, softened
Preparation
Add all the veggies and ingredients, except the salt and cauliflower, to a cooking pot and cook on a boil. Reduce the heat and let it simmer for a few hours until the meat is soft and tender. Strain the stock and pour it into another pot. Add the cauliflower and salt to the stock and cook on low heat. Meanwhile, make the dumplings. Beat the egg with butter in a bowl, add the baking powder and flour and mix well. Stir the cream of wheat in and mix well. Divide this batter into dumplings and drop them into the soup. Add the beef and carrots to the soup as well. Cook for 7 minutes, serve warm.
