Dive Bar Veal Stew

This veal stew is a Bosnian specialty and it is served on all special occasions. It is prepared using a nice mix of veal with carrots, bell pepper and spices.
Ingredients (6 servings)
3 tablespoons of butter
1 onion, diced
2 carrots, diced
1 yellow bell pepper, sliced
16 ounces of veal, diced
Salt and black pepper to taste
1 tablespoon of spice mix
1 tablespoon of sweet paprika
1 tablespoon of flour
6 cups of beef broth
2 potatoes, diced
1 tablespoon of parsley, minced
Preparation
Sauté the onions with oil in a medium pot for 2 minutes, then add the carrots. Sauté for 2 minutes. Stir the pepper in and sauté for 3 minutes. Add the meat and sauté for 10 minutes. Add 1 cup of broth, flour and spices and mix well until mixed evenly. Add the potatoes and the remaining broth. Cover the pot and cook for almost 25 minutes. Garnish with parsley. Serve warm.
