Citrus Glazed Maple Salmon with Pineapple Cabbage Slaw

INGREDIENTS

1/4 cup freshly squeezed lemon juice

1 teaspoon orange zest

1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger

1 tablespoon 100 percent pure maple syrup

1/2 cup gluten-free tamari

1 pound wild salmon fillets

DIRECTIONS

Step 1. Preheat the oven to 350°F.

Step 2. In a glass measuring container, place the lemon juice, orange zest, ginger, maple syrup and tamari. Whisk until blended.

Step 3. Rinse the salmon and place it skin-side down in a glass baking dish. Pour the marinade over the fish, cover and bake for about 10 minutes, or until the salmon flakes.
