INGREDIENTS
1/4 cup Orange Zinger Dressing
1/2 cup Kalamata olives, pitted
1/2 cup coarsely chopped fresh parsley
4 wild cod fillets (4 to 6 ounces each) or other wild fish
2 teaspoons extra-virgin olive oil
DIRECTIONS
Step 1. Preheat oven to 350°F.
Step 2. In the bowl of a food processor, combine the dressing, olives and parsley and blend until it resembles a smooth paste.
Step 3. Place the fish in a lightly oiled baking dish. Spread 1 tablespoon of the olive pesto onto each fish fillet.
Step 4. Bake for about 20 minutes, until the fish is flaky, and serve with Spinach with Cherry Tomatoes (see below).
