INGREDIENTS
11/2 pounds red or purple potatoes, washed, unpeeled and cut into quarters
1 tablespoon extra-virgin olive oil
2 tablespoons minced fresh parsley
1 teaspoon crushed rosemary
Sea salt and freshly ground pepper to taste
DIRECTIONS
Step 1. Preheat the oven to 350°F.
Step 2. Place the potatoes in an 8 x 8-inch baking dish.
Step 3. Coat the potatoes with the olive oil.
Step 4. Add the parsley, rosemary, salt and pepper to taste.
Step 5. Bake covered for 25 minutes and uncovered an additional 10 minutes, until golden brown.
