Buffalo Chicken Bites with Blue Cheese Dipping Sauce

1 In medium bowl, mix egg white and Buffalo wing sauce. Stir in chicken. Cover; refrigerate 30 minutes.

2 Line cookie sheet with waxed paper. In large resealable food-storage plastic bag, shake Bisquick mix, cornmeal, salt and pepper. With slotted spoon, remove one-fourth of the chicken pieces from bowl; place in bag of Bisquick mixture. Seal bag; shake to coat. Shake excess Bisquick mixture from chicken; place on cookie sheet. Repeat with remaining chicken.

3 In small bowl, mix sauce ingredients until blended. Cover; refrigerate until serving time.

4 In 10-inch nonstick skillet, heat ¼ inch oil to medium-high heat (375°F). Working in batches, cook chicken bites in oil 3 to 4 minutes, turning once, until golden brown. Drain on paper towels. Serve chicken with sauce.
