If there’s one breakfast that ticks all the nutritional boxes, it’s the BEAST – that’s Bacon, Egg, Avocado, Spinach and Tomato.
Bacon delivers protein, which helps keep you full through until lunch (if you don’t like bacon, swap it out for some salmon; if you don’t eat meat, swap it for beans, vege sausage or a nut- or tofu-based product). The egg also provides protein, along with a good dose of minerals and vitamins. The avocado provides plenty of healthy fat, and the spinach and tomato tick off two of your rainbow requirements, delivering a good dose of phytonutrients at the same time. You’ll notice that there’s no toast – you just don’t need it with this meal.
Now, you’re not going to eat this for breakfast every day; maybe you’ll have it on a Sunday morning, when you’ve got the time to sit down and enjoy it. But that doesn’t mean that breakfast for the rest of the week needs to be a bowl of processed cereal or a couple of slices of toast and jam.
