Apple Oatmeal
Serves 4
•  1 1/2 tbsp. coconut oil
•  1 cup steel cut oatmeal
• 4 cups water
• 4 Tbsp. lucuma powder
4 apples
• 1/2 tsp. ground vanilla bean
•  A dash of cinnamon and/or nutmeg
Oil slow cooker dish. Mix all ingredients in a mixing bowl, stir and put in the slow cooker. Cook on low for 8 hours. Stir before serving.
Top with apple and cinnamon.
