Buttermilk White Cake

MAKES 1 (9 X 13-INCH) CAKE

No need to worry if you don’t have a cake mix on hand. This white cake comes together in just minutes.

Nonstick cooking spray

2¼ cups all-purpose flour

2 teaspoons baking soda

1½ teaspoons baking powder

½ teaspoon salt

1⅓ cups sugar

½ cup (1 stick) unsalted butter, softened

4 large egg whites

2 teaspoons pure vanilla extract

1½ cups buttermilk

Preheat the oven to 350ºF. Spray a 9 x 13-inch baking dish with nonstick cooking spray.

In a medium bowl, whisk together the flour, baking soda, baking powder, and salt; set aside.

In a large bowl using a handheld mixer, beat together the sugar and butter on medium-high speed until the mixture is light and creamy. Beat in the egg whites, one a time, beating well after each addition. Beat in the vanilla. Beat for 30 seconds.

Add the flour mixture, alternating with the buttermilk, making three additions of the flour and two of the buttermilk. Beat just until blended. Pour the batter into the prepared baking dish.

Bake for 33 to 38 minutes, or until a wooden pick inserted into the center comes out clean. Place the cake on a wire rack to cool. Proceed with the poke cake recipe directions.
