Margarita Poke Cake

MAKES 1 (9 X 13-INCH) CAKE

It is Friday night and that is the perfect time to grab a margarita with your friends. What fun! But why wait for a night out? This cake has all the flavors and the fun of that famous drink.

Nonstick cooking spray

1 (15.25- to 18-ounce) box white cake mix

Eggs, oil, and water as directed on the cake mix box

⅓ cup sugar

⅓ cup fresh lime juice

¼ cup tequila

1 or 2 drops green food coloring

1 or 2 drops yellow food coloring

Orange Liqueur Buttercream Frosting

Preheat the oven to 350ºF. Spray a 9 x 13-inch baking dish with nonstick cooking spray.

Prepare and bake the cake according to the package directions for a 9 x 13-inch cake. Place the cake on a wire rack to cool for 10 minutes.

Poke holes evenly over the baked cake using the tines of a fork.

In a small saucepan, combine the sugar and lime juice. Heat over medium heat, stirring frequently, until boiling. Reduce the heat to low and cook, uncovered, for 3 minutes, stirring frequently. Remove from the heat and stir in the tequila. Tint lightly with the food coloring to a lime color. Slowly and evenly drizzle the hot syrup over the cake. Let stand for 30 minutes.

Frost the cake with the Orange Liqueur Buttercream Frosting.

VARIATION

Do you prefer to make the cake without liquor? Make the sugar and lime syrup as directed, but omit the tequila. Proceed as the recipe directs. Frost with Orange Buttercream Frosting.
