Peaches ’n’ Cream Bundt Poke Cake

MAKES 1 (12-CUP) BUNDT CAKE

Is it any wonder that nectar was professed to be the drink of the Greek and Roman gods? I think not, for with one sip, you will enter another world. The use of peach nectar throughout this recipe assures a sweet, peach-filled taste that is sure to please. When fresh peaches are in season, garnish the whipped cream with a slice or two.

Nonstick baking spray with flour

1 (15.25- to 18-ounce) box vanilla cake mix

1 (3-ounce) box peach gelatin

1 cup peach nectar

½ cup canola or vegetable oil

4 large eggs

1 (14.5-ounce) can no-sugar-added sliced peaches, drained

GLAZE:

¾ cup confectioners’ sugar

3 tablespoons peach nectar

Whipped cream or frozen whipped topping, thawed

Preheat the oven to 350ºF. Spray a 12-cup Bundt pan with nonstick baking spray with flour.

In a large bowl using a handheld mixer on low speed, beat together the cake mix, gelatin, nectar, oil, and eggs. Scrape down the sides of the bowl well and beat for 2 minutes on medium speed. Drain the peaches on paper towels and pat dry. Slice each peach slice into small pieces. Gently fold the sliced peaches into the batter using a spatula. Pour the batter into the prepared baking pan.

Bake for 40 to 45 minutes, or until a wooden pick inserted into the center of the cake comes out clean. Place the cake on a wire rack to cool for 10 minutes.

MAKE THE GLAZE: In a small bowl, whisk together the confectioners’ sugar and nectar.

Using a skewer, poke holes evenly over the surface of the cake. Using a large spoon, drizzle half the glaze over the cake in the pan. Let cool for 10 minutes more.

Line a rimmed baking sheet with aluminum foil (to make cleanup easy). Place a wire rack on the foil-lined baking sheet. Invert the cake onto the wire rack and remove the pan. Poke holes evenly over the top of the baked cake using a skewer. Drizzle the remaining glaze into the holes.

Carefully move the cake to a cake plate and serve. Dollop each slice with whipped cream or whipped topping.

TIP

If fresh peaches are in season, substitute 1¼ cups diced peeled peaches for the canned peaches.
