Cream Cheese Frosting

MAKES ABOUT 3 CUPS

1 (8-ounce) package cream cheese, softened

½ cup (1 stick) unsalted butter, softened

4 cups confectioners’ sugar

1 teaspoon pure vanilla extract

In a large bowl using a handheld mixer on medium speed, beat the cream cheese until smooth. Add the remaining ingredients and beat until smooth and creamy. The frosting should be a nice spreading consistency.

VARIATIONS

ALMOND CREAM CHEESE FROSTING: Omit the vanilla extract. Add ½ teaspoon pure almond extract. If an intense almond flavor is desired, increase the almond extract to 1 teaspoon.

LIME CREAM CHEESE FROSTING: Omit the vanilla extract and add 1 teaspoon grated lime zest and 1 to 2 teaspoons fresh lime juice.
