MAKES ABOUT 3 CUPS
½ cup (1 stick) unsalted butter or margarine, softened
½ cup vegetable shortening
4 cups confectioners’ sugar
1 teaspoon pure vanilla extract
2 to 3 tablespoons whole milk
In a large bowl using a handheld mixer on mediumspeed, beat together the butter and shortening. Add the confectioners’ sugar, vanilla, and 2 tablespoons of the milk. Continue to blend when the sugar is incorporated, increase the speed to medium-high and beat until the frosting is creamy and fluffy. If necessary for a nice spreading consistency, add the remaining 1 tablespoon milk.

If not using immediately, store in an airtight container in the refrigerator for up to 3 weeks.
