Poinsettia Cooler

Take inspiration from seasonal poinsettias and whip up this zesty cocktail with a rich holiday hue.

MAKES 1 DRINK

3 oz [90 ml] tequila

2 oz [60 ml] cranberry juice cocktail

1 oz [30 ml] fresh lime juice

1 to 2 oz [30 to 60 ml] Cranberry Shrub (page 24)

1 lime

Fill an old fashioned glass or mason jar with crushed ice. Pour the tequila, cranberry juice, and lime juice into an ice-filled shaker. Shake vigorously and strain into the glass. Add a small handful more of crushed ice on top of the drink to form a small mound and drizzle the cranberry shrub over it. Grate lime zest over the top. Serve with a straw.

VARIATION: If you don’t have cranberry shrub on hand, use equal parts Simple Syrup (page 23) and cranberry juice.
