This light version of the classic brunch drink is the perfect pairing with a breakfast spread or washed down with some sweet holiday cookies.
MAKES 1 DRINK
2 oz [60 ml] white cranberry juice
4 oz [120 ml] champagne
1 or 2 fresh cranberries, for garnish (optional)
Pour the cranberry juice and champagne into an ice-filled shaker. Shake until cold, then strain into a flute. Add the cranberries for garnish, if desired.
VARIATION: Create mimosas for a crowd by multiplying the recipe by the number of guests and pouring the juice and champagne mixture into a pitcher.
